250 g flan pastry (see
recipe)
60 g butter, softened ½ tsp ground nutmeg |
¼ cup caster sugar
2 eggs, lightly beaten 250 g cottage cheese |
juice of ½ lemon
½ cup currants 2 tbsps white breadcrumbs |
1. Roll out pastry thinly on a floured
surface. Use to line a 20 cm (8-inch) flan tin.
2. Mix the butter, sugar, nutmeg and breadcrumbs. Stir in the eggs and cheese, mixing well. Stir in the lemon juice and currants. 3. Pour mixture into flan tin. Bake
in a preheated oven at 190oC (375oF) for 25 minutes
until the filling is set. Cool on wire rack.
