100 g plain flour
pinch of salt |
75 g butter or margarine and
lard, chilled and diced |
1 tsp caster sugar
1 egg, beaten |
1. Mix the flour and salt together
in a bowl. Rub the fat into the flour, until the mixture resembles fine
breadcrumbs. Stir in the sugar.
2. Add the egg, stirring with a round-bladed knife until the ingredients begin to stick together in large lumps. 3. With one hand, collect the mixture together and knead lightly for a few seconds to give a firm, smooth dough. Roll out as for the shortcrust pastry. 4. Bake in the oven at 200oC
(400oF), until lightly browned.
