Coconut & Orange Tarts

 
180 g sweet short pastry 
       (see recipe
1 cup desiccated coconut 
1/3 cup caster sugar 
1½ tbsps orange marmalade 
 
1 egg, beaten
grated rind of 1 orange
 
1.  Roll out pastry thinly on a floured surface. Use to line twelve 6 cm (2½-inch) patty tins. 

2.  Mix the remaining ingredients.  

3.  Divide mixture between patty tins. Bake in a preheated oven at 190oC (375oF) for 20 minutes until golden. Cool on wire rack.
