Walnut-Raisin Bread

 
2 cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup butter, softened
¾ cup sugar
1 egg
¼ cup orange juice
1 can crushed pineapples,  
       undrained
1 cup raisins
1 cup walnuts, chopped
 
1.  Combine flour, baking powder, baking soda and salt. Set aside. 

2.  In another bowl, cream butter and sugar. Add egg and orange juice and mix well. 

3.  Add 1/3 of the flour mixture, beat until smooth. Mix in remaining flour mixture and pineapple. Stir in raisins and walnuts.

4.  Grease 9 x 5-inch loaf pan. Preheat oven to 180oC (350oF) and bake for 60 to 70 minutes. Cool in pan for 10 minutes, then remove and cool on wire rack. 
 
Makes 1 loaf.
