2 cups all-purpose flour
1 tsp baking powder ½ tsp baking soda ½ tsp salt |
½ cup butter, softened
¾ cup sugar 1 egg ¼ cup orange juice |
1 can crushed pineapples,
undrained 1 cup raisins 1 cup walnuts, chopped |
1. Combine flour, baking powder, baking
soda and salt. Set aside.
2. In another bowl, cream butter and sugar. Add egg and orange juice and mix well. 3. Add 1/3 of the flour mixture, beat until smooth. Mix in remaining flour mixture and pineapple. Stir in raisins and walnuts. 4. Grease 9 x 5-inch loaf pan. Preheat
oven to 180oC (350oF) and bake for 60 to 70 minutes.
Cool in pan for 10 minutes, then remove and cool on wire rack.
