2½ cups all-purpose flour
2/3 cup sugar 1 tsp baking soda ¾ tsp ground cinnamon ½ tsp salt |
1½ cups fresh strawberries
1 cup non-fat buttermilk 1/3 cup margarine, melted 1¼ tsps vanilla extract |
1 egg, lightly beaten
1 egg white, lightly beaten Cooking spray 1½ tbsps sugar |
1. Preheat the oven to 180oC
(350oF). Coat 18 muffin cups with cooking spray.
2. Combine flour, sugar, salt, baking soda, and ground cinnamon in a large bowl. Mix well. Cut up strawberries and add to mixture. 3. Combine buttermilk, margarine, vanilla, egg and egg white. Make a hole in the middle of the dry mixture. Add wet mixture to dry mixture. Stir until just moist. 4. Divide the batter into the prepared
muffin cups and sprinkle with sugar. Bake for 25 minutes. Cool on wire
rack. Serve warm or at room temperature.
