Strawberry Ice Cream

 
6 tbsps all-purpose flour
3 cups sugar
1 tsp salt
6 eggs
4 cups milk
3 cups strawberries, hulled
2 tbsps lemon juice
4 cups half-and-half cream
2 tbsps vanilla extract
red food colouring
 
1.  In a heavy saucepan, combine flour, 2 cups sugar and salt using a whisk. Mix until well-blended. Cook over medium heat, stirring occasionally, until mixture thickens (about 45 minutes). DO NOT BOIL. 

2.  Cover with cling film and allow to cool for 3 hours. 

3.  In a separate bowl, crushed strawberries together with lemon juice and remaining sugar. Let stand for 1 hour.

4.  Pour cream, vanilla, food colouring, egg mixture and berry mixture into an ice cream machine. Freeze according to machine's instructions.

Makes 3 quarts.
