½ cup butter, softened
½ cup granulated sugar ½ cup crushed pineapples, drained |
1 egg
1 tsp vanilla essence 2 cups all-purpose flour 1 tsp baking soda |
1 tsp baking powder
¼ tsp salt 1 tbsp granulated sugar ¼ tsp nutmeg |
1. Preheat oven to 190oC
(375oF).
2. Combine butter and first amount of sugar together. Mix well. Add egg, vanilla and pineapple. 3. Add flour, baking powder, baking soda and salt. Stir well. Drop by spoonfuls onto ungreased cookie sheets. Mix second amount of sugar and nutmeg together. Sprinkle on top of unbaked cookies. 4. Bake for 8 to 10 minutes. Cool
on wire racks.
