Pear-Walnut Muffins

 
1½ cups all-purpose flour 
2/3 cup brown sugar 
½ cup whole-wheat flour 
1 tbsp baking powder 
½ tsp salt
½ tsp ground cinnamon 
1¼ cups pear, finely chopped 
½ cup chopped walnuts,  
     toasted 
¾ cup 2% low-fat milk 
2 tbsps vegetable oil 
1 large egg, lightly beaten 
Cooking spray 
1 tbsp granulated sugar
 
1.  Preheat the oven to 200oC (400oF). Coat a muffin pan with cooking spray. 

2.  Combine both types of flours, sugar, salt, baking powder and ground cinnamon in a large bowl. Mix well. 

3.  Add pears and walnuts and mix well to coat. Make a hole in the middle of the mixture. Mix milk, oil and egg and pour into the hole. Stir until just moist and sticky. 

4.  Scoop the batter into the prepared muffin pan and sprinkle with granulated sugar. Bake for 20 minutes. Cool on wire rack. Serve warm or at room temperature. 
 
Makes 12 muffins.
