Oatmeal Raisin Cookies

 
200 g butter 
1 cup brown sugar 
½ cup white sugar 
1 egg
1 tbsp water 
1 tsp vanilla essence 
¾ cup plain flour 
1 tsp cinnamon powder
½ tsp baking soda 
3 cups quick cooking oats 
1 cup raisins 
 
1.  Preheat oven to 200oC (400oF). Grease baking trays. 

2.  Combine butter and sugars. Add egg, water and vanilla essence. Mix well. Sift together flour, cinnamon powder and baking soda. Combine both mixtures. Add oats and raisins. 

3.  Place each tablespoon of dough 5 cm (2 inches) apart on the baking trays. Bake for 15 to 20 minutes until edges are brown but centres still soft. Cool on wire racks.
