½ cup butter, softened
¼ cup granulated sugar ½ brown sugar, packed 1 egg |
1 tbsp lemon rind, grated
2 tbsps lemon juice 1½ cups all-purpose flour |
1 tsp baking powder
½ tsp baking soda granulated sugar for coating |
1. Preheat oven to 180oC
(350oF).
2. Cream butter and sugars. Beat in egg. Add in lemon rind and juice. 3. Mix flour, baking powder and baking soda and add to sugar mixture. Stir well. Roll into ½ cm (1-inch) balls and roll in granulated sugar. Place on ungreased cookie sheets. 4. Bake for 10 to 15 minutes.
Cool on wire racks.
