4 cups baking apples, peeled
and diced 1 cup sugar 1½ cups raisins |
1½ cups chopped nuts
2 eggs ½ cup vegetable oil 2 tsps vanilla extract |
2 cups all-purpose flour
1½ tsps baking soda 2 tsps ground cinnamon pinch of salt |
1. Preheat the oven to 190oC
(375oF). Grease 18 muffin cups.
2. In a large mixing bowl, combine apples, sugar, raisins and nuts. Set aside. 3. Beat eggs, oil and vanilla together, then add to apple mixture. Combine flour, baking soda, cinnamon and salt. Carefully add to apple mixture. Do not overmix. 4. Spoon the batter into the muffin cups ¾ full. Bake for 20 minutes. Cool the muffins on wire rack. Makes 18 muffins. |
