2 packages dry yeast
1 cup lukewarm water 3 cups unbleached flour ¼ cup olive oil |

1 tsp salt 3 tbsps tomato paste Fresh-cracked pepper |
1 yellow onion, peeled and
chopped 6 green onions, chopped 1 clove garlic, crushed |
1. Grease a 9 x 13-inch shallow pan.
Dissolve the yeast in the water.
2. Add half the flour, olive oil, sugar,
and salt, and mix with an electric mixer until smooth.
3. Place the dough on plastic wrap,
and cover with a large metal bowl. Allow to rise about 1
4. Punch the dough down, and knead it
for 1 or 2 minutes. Roll the dough out to fit the pan, and place the
dough in the pan. Let the dough rise until not
quite doubled in bulk, and
