Double Chocolate Muffins

 
100 g plain chocolate
50 g cocoa powder
230 g self-raising flour
1 tsp baking powder
50 g dark brown soft sugar
pinch of salt
100 g plain chocolate chips
225 ml milk 
4 tbsps vegetable oil
1 tsp vanilla essence
1 egg 
 
1.  Grease 12 deep muffin tins. Place a large paper muffin cups in each. 

2.  Break the chocolate into small pieces. Microwave on LOW for 3 to 4 minutes or until melted. Stir occasionally. Alternatively, heat in a heatproof bowl over a pan of simmering water.  

3.  Remove from heat and add in the remaining ingredients. Beat well together. Spoon the mixture into the muffin cups.

4.  Bake in a preheated oven at 220oC (425oF) for 15 minutes. Serve warm.

Makes 12 muffins.
