Custard Pie

 
1 pie shell (see recipe
2¼ cups milk 
4 eggs
½ cup granulated sugar 
¼ tsp salt 
4 tbsps margarine. 
1 tsp vanilla essence 
¼ tsp nutmeg
 
1.  Heat milk in heavy saucepan until almost boiling. 

2.  Stir eggs briskly in a small bowl. Mix in sugar, salt and vanilla. Add slowly into hot milk. 

3.  Grease inside of pie shell with softened margarine. Pour mixture into pie shell. Sprinkle top with nutmeg. 

4.  Bake on the bottom shelf in a 230oC (450oF) oven for 10 minutes. Lower heat to 170oC (325oF) and bake for another 30 minutes. Cool. 

Makes 1 pie.
