125 g butter
1 cup caster sugar 1 egg |
1 cup all-purpose flour
½ cup self-raising flour |
½ tsp baking soda
2 tsps ground cinnamon |
1. Cream butter and ¾ cup of
sugar together. Add egg and beat well.
2. Stir both flours, and baking soda together and add to butter mixture. Turn dough onto working surface and knead briefly Wrap in cling wrap and refrigerate for 30 minutes until firm. 3. Mix cinnamon and remaining sugar in a small bowl. Roll dough into small balls and coat lightly with cinnamon-sugar mixture. Place 2 inches apart on lightly greased baking trays. 4. Bake at 180oC (350oF)
for 8 minutes or until golden. Cool on wire racks.
