Choux Pastry

 
1 cup plain flour 
1 tsp sugar
75 g butter 
3 egg, beaten
¾ cup water 
 
1.  Place butter, water and sugar in a saucepan and bring to a boil. Add the flour and beat well over medium heat for 3 minutes, until mixture forms a soft dough and separates from the side of the pan.  

2.  Tip the hot dough into a large basin and beat the eggs in one at a time. Beat well after each addition. Add the last egg slowly. The dough should be soft but stiff enough to hold its shape when dropped from a spoon. 

3.  Continue beating until the dough is smooth and glossy. 
 
Makes 125 grams.
