Chocolate Chip Shortbread

 
1 cup butter, softened 
½ cup brown sugar, packed 
1 tsp vanilla essence
2 cups all-purpose flour 
1 cup choc chips, semi-sweet
 
1.  Preheat oven to 170oC (325oF).  

2.  Combine butter, sugar, vanilla and flour in a bowl and mix well. Form into a dough.

3.  Add chocolate chips into dough and stir well. Roll into ½ cm (1-inch) balls and place on ungreased cookie sheets.  Flatten with a fork.

4.  Bake for 10 to 15 minutes.  Cool on wire racks. 
 
Makes about 60.
