Butterscotch Thins

 
1 cup butterscotch chips 
½ cup butter 
¾ tsp vanilla extract
1 egg 
1½ cups plain flour 
¾ tsp baking soda
1/3 cup chopped nuts 
2/3 cup firmly packed brown  
             sugar 
 
1.  Over hot (not boiling) water, combine the butterscotch chips and butter; stir until chips melt and mixture is smooth. Transfer to a large bowl. Add brown sugar and egg; beat until light and fluffy. Add flour and baking soda. 

2.  Stir in nuts and vanilla extract. Wrap in waxed paper; chill in refrigerator until firm enough to handle (about an hour). Shape into a log about 12 x 1½ inches; wrap and return to refrigerator. 

3.  To bake, preheat oven to 190oC (375oF). Cut log into slices 1/8 inch thick. Place on ungreased cookie sheets. Bake 5 to 6 minutes.
