Bran Muffins

 
1 cup all-purpose flour 
1 cup whole wheat flour 
½ cup rolled oats 
½ cup all-bran cereal 
1 tsp baking powder 
1 tsp baking soda
1 can (8 oz) crushed  
      pineapples in natural juice 
      undrained 
½ cup chopped nuts, dates or  
       raisins, or mixture of all
½ tsp salt 
1 egg, beaten 
¾ cup buttermilk 
½ cup molasses 
¼ cup vegetable oil
 
1.  Preheat the oven to 200oC (400oF). Grease 18 muffin cups. 

2.  In a mixing bowl, combine both flours, oats, cereal, baking powder, baking soda and salt. Mix and make a hole in the centre. 

3.  Combine the eggs, buttermilk, molasses, oil and pineapple with juice. Pour into hole. Mix until dry ingredients are moistened. Stir in nuts, dates or raisins. 

4.  Spoon the batter into the muffin cups ¾ full. Bake for 12 minutes or until golden brown. Cool the muffins on wire rack. 

Note: This recipe contains little sugar, salt and fat.  
 
Makes 18 muffins.
