1½ cups all-purpose flour
½ cup whole wheat flour ½ cup cornmeal ¾ cup sugar 2 ½ tsps baking powder |
½ tsp baking soda
½ tsp salt ½ cup buttermilk ½ cup orange juice 2 cups fresh blueberries |
1 egg, beaten
1 tbsp grated orange zest ¼ cup margarine or butter, melted |
1. Preheat the oven to 200oC
(400oF). Grease 12 muffin cups.
2. Combine the all-purpose flour, whole wheat flour, cornmeal, sugar, salt, baking powder and baking soda in a large bowl. 3. Combine the buttermilk, orange juice, margarine, eggs, and orange zest in a small bowl. Add the flour mixture and mix the dry ingredients until they are just moistened. Fold in the blueberries. 4. Scoop the batter into the prepared
muffin cups and bake for 25 minutes. Put on wire rack to cool. Serve warm
or at room temperature.
