Banana Cake

 
225 g cake flour 
1½ tsps baking powder 
170 g bananas, mashed  
          (use ripe ones)
150 g sugar 
½ tsp banana essence 
1 tsp bicarbonate of soda
4 eggs 
225 g butter, melted 
 
1.  Preheat the oven to 175oC (340oF). Grease a 20 cm (8-inch) round cake tin. Line the base and sides with greaseproof paper. 

2.  Sift together the flour and baking powder into a mixing bowl. Then add in the mashed bananas, sugar, banana essence and bicarbonate of soda. Beat the eggs until fluffy and gradually add into the flour mixture. Then add in the melted butter. 

3.  Pour the mixture into the prepared tin and bake for 50 minutes. To ensure it is cooked, insert a skewer. If it comes out clean, the cake is cooked. Leave the cake in the tin for 10 minutes before removing to wire rack to cool completely. Cut into pieces to serve.
