Banana Bread

 
2/3 cup sugar
1/3 cup shortening
2 cups all-purpose flour
2 tsps baking powder
¼ tsp baking soda 
¼ tsp salt
1 cup ripe bananas, mashed
 
1.  Cream sugar and shortening in a large bowl. Combine flour, baking powder, baking soda and salt.  

2.  Add flour mixture to sugar mixture alternately with the bananas, beating well after each addition. 

3.  Grease a 9 x 5-inch loaf pan. Pour mixture in. 

4.  Preheat oven to 180oC (350oF) and bake for 40 to 45 minutes. Cool in pan for 10 minutes before removing to a wire rack.  
 
Makes 1 loaf.
